I'll stop posting about muffins when they stop being delicious.
There are few things in this world better than coffee cake with a cup of Joe in the morning, or even better, with an iced cup of Joe in the afternoon. These are more about being delicious than they are about being healthy, but hey, you only live once.
These are super-simple to make, and much like my Skinny-ish Banana Chocolate Chip Muffins, will be gone in 4 seconds.
Let's do this.
The Goods:
- 1-3/4 cups all-purpose flour
- 1-1/2 tsp baking powder
- 1/2 tsp Kosher salt
- 1/2 tsp ground nutmeg
- 1 tsp ground cinnamon
- 1/3 cup unsweetened applesauce
- 3/4 cup granulated sugar
- 1 egg
- 3/4 cup milk
- 1 tsp vanilla extract
For the topping
- 1/4 cup melted unsalted butter
- 1/3 cup vanilla sugar (details below. you can use regular sugar as well)
- 1 tbsp cinnamon
- Dash of nutmeg
How To:
- Preheat oven to 350°.
- In the bowl of your stand mixer (Sir Mixalot), combine 3/4 cup sugar, applesauce, egg, milk, and vanilla extract.
- In a separate bowl, sift together dry ingredients. Add in 3 or 4 batches to the mixer on low speed.
- Scoop into a greased muffin tin and bake for 18-22 minutes, or until a toothpick inserted comes out clean. Allow to rest for 2 minutes in the pan, then transfer to a wire rack.
- Have your melted butter handy in one small bowl. In another, mix vanilla sugar, cinnamon, and nutmeg. (I make vanilla sugar by placing a cut vanilla bean in a small jar of sugar and let it sit for at least a week. You can absolutely just use regular sugar and it will still be yummy).
- Dip each muffin first in the butter, then the cinnamon-vanilla-sugar. Place back on wire rack to set.
- Devour.
